Belle & Herbs began in 2002 as a Newcastle café that grew into an award-winning restaurant & food festival innovator. Our work moved into academic and medical research directly with patients, leading collaborative studies on food, health, nutrition and recovery from illness. That experience formed a better science-based understanding of food / taste / flavour and an obsession with fermentation was born!
Today, Belle & Herbs is run by Sam and Pan. Pan brings three generations of a family fermented food business in Myanmar and more than ten years in Michelin-rated UK kitchens.
We produce live, unpasteurised ferments in small batches using traditional techniques backed by evidence and experience. It’s simple food, made carefully with pride.
